In her scrawling, elegant handwriting, my grandmother set forth the following recipe for a coconut pie. Divine. Too bad I'm the only coconut fan around the house. Too bad, really, that I have to eat the ENTIRE thing on my own. I'm torn apart...can't you tell?!? Impossible Coconut Pie
- 1 cup white sugar
- 2 tablespoons all-purpose flour
- 1/2 cup butter
- 4 eggs
- 1 teaspoon vanilla extract
- 1 cup milk
- 1.5 cup flaked coconut
- 1 pastry for a 9 inch single crust pie
- Mix flour and sugar. Cream in butter and eggs. Mix in vanilla and milk until well combined. Fold in coconut. Pour into prepared pie crust.
- Bake at 350 degrees F for 40 minutes or until golden brown. Cool completely before cutting.
