Nanny's Recipe Box: Impossible Coconut Pie

In her scrawling, elegant handwriting, my grandmother set forth the following recipe for a coconut pie. Divine. Too bad I'm the only coconut fan around the house. Too bad, really, that I have to eat the ENTIRE thing on my own. I'm torn apart...can't you tell?!?

Impossible Coconut Pie
  • 1 cup white sugar
  • 2 tablespoons all-purpose flour
  • 1/2 cup butter
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1.5 cup flaked coconut
  • 1 pastry for a 9 inch single crust pie
  1. Mix flour and sugar. Cream in butter and eggs. Mix in vanilla and milk until well combined. Fold in coconut. Pour into prepared pie crust.
  2. Bake at 350 degrees F for 40 minutes or until golden brown. Cool completely before cutting.
